The globalization hasn’t achieved – luckyly – uniform the agro-food systems. On the contrary, at international level, it is shown a bigger orientation towards local and quality products, expressions – in many cases – of territories with a rich and diversified cultural heritage. The called “short food supply chains” implies also an attention to the “origin” of the food that comes into our table.
